Storing Herbs

Storing herbs properly after harvesting will help them keep there natural flavor and aroma. There are different methods that can be used to preserve different types of herbs. Some herbs can be stored by refrigeration, others can be placed in a glass with water and some can be dried , frozen or by a method of steeping. Depending on the method used herbs can stay fresh from only days to as much as a year until the next growing season.
Care is needed when harvesting to preserve herbs properly. Handling fresh herbs to prevent bruising of the leaves. All damaged, wilted, bruised or brown leaves should be removed and the herbs that are being preserved should be clean.
Herbs can be stored whole or crushed. Storing herbs whole will hold there flavor and aroma longer than a herb that is crushed.
