Plants need the proper pH level, it controls how well they utilize the nutrients that are available in your gardens soil. Not all plants are the same, they have there preference, so it is important to know what this level is for the crop you are growing. This way you can choose plants that have the same preferences, and avoid those that will not do well in your soil.
